I adore banana bread. My stepmother used to make it for me when I forgot to eat the bananas in my lunch. Banana bread is always the perfect solution to those sad, blackened, smooshed lunch box bananas, or just the poor bananas you forgot from last week, even though they have been sitting right in front of you the whole damn time.
This banana bread recipe is moist and rich, a fragrant bouquet of warm flavors that are great for these bone chilling mid-winter months. I hope you enjoy it!
THE BEST BANANA BREAD IN THE WORLD
- 1 stick (1/2 cup) melted butter
- ½ cup brown sugar
- ½ cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- ½ cup greek yogurt (I love the honey flavored kind, but you can also use quark, regular yogurt, sour cream, or crème fraîche)
- 3 very ripe mushed bananas
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cups flour

Heat your oven to 360ºF or 175ºC. Combine your ingredients in a mixer, until smooth. Grease a bread pan, and bake for 60 minutes. You can add nuts if you want, but why?
